Paleo Pumpkin Muffins Recipe photoI love love love pumpkin muffins and I want to share this healthy Paleo recipe with you! It’s true that you can’t eat too many “regular” muffins without utterly destroying your diet. Luckily for all of us, I found this Paleo diet version of some really tasty and healthy Paleo pumpkin muffins. This recipe makes 12 Paleo pumpkin muffins. The serving size is 2 muffins for breakfast or a small meal, or you can simply eat one muffin for a healthy snack.

The recipe and it’s cooking instructions are posted below for easy reading. From start to finish these muffins take about 40 minutes to complete. I have made them a number of times now and I loved them so much I had to make a little blog about it and share it with you all.

Paleo Pumpkin Muffins Recipe

Ingredients:

1½ cups almond flour
3/4 cup canned pumpkin (or cook and puree pumpkin yourself)
3 large eggs
1 tsp baking powder
1 tsp baking soda
½ tsp ground cinnamon
1½ tsp pumpkin pie spice
1/8 tsp sea salt
1/4 cup raw honey (optional)
2 tsp almond butter
1 Tbs sliced almonds

Cooking Instructions:

1. Preheat oven to 350℉.
2. Coat muffin tins with coconut oil (or use paper muffin cups and add 1/2 tsp melted coconut oil to batter).
3. Mix all ingredients and pour evenly into tins.
4. Bake for 25 minutes on the middle rack.
5. Sprinkle almonds on top immediately after taking them out of the oven.

    Paleo Pumpkin muffins are absolutely my favorite type of muffin. I’ve tried so many different recipes, and I have to say…this one tops them all! The muffins turn out so delicious and moist. They’re a huge hit in the fall at our church bake sale! So healthy AND delicious…best of both worlds.
